The Clai winery, nestled in the heart of Istria, is a true gem of natural winemaking. Under the former leadership of Giorgio Clai, a winemaker with vision and passion, the winery has become synonymous with quality and authenticity. Spanning 10 hectares of vineyards and 5 hectares of olive groves in the picturesque landscape around the village of Krasica, south of Buje, the vines and olive trees thrive under ideal conditions. The proximity to the Adriatic Sea and an elevation of about 200 meters create a perfect microclimate for the grapes to develop their full flavor. Clai's terroir is characterized by calcareous flysch soil, known for its low fertility and good drainage. These conditions stress the vines naturally, leading to the production of grapes of the highest quality. The Clai winery and its team place great emphasis on organic farming, completely avoiding systemic treatments like herbicides, insecticides, or fungicides. Fertilization is done sparingly and exclusively with organic material. Winemaking at Clai follows a natural approach. The grapes undergo spontaneous fermentation on the skins without the addition of enzymes, selected yeasts, or lactic acid bacteria. The wines mature in barrels of various sizes and spend a long time on the lees, giving them complexity and depth. After nearly two years of aging, the wines are bottled without micro- or sterile filtration to preserve their natural purity and the terroir's character. |
