Product details

The Georgium Ovis is a fascinating cuvée from the heart of Central Carinthia, created by Marcus Gruze. This exceptional Orange Wine impresses with its intense orange color and complexity in taste. Made from Chardonnay grapes, it reveals a rich palette of aromas. The mash fermentation with natural yeasts and the long storage in wooden barrels give it a unique structure and depth. Bottled unfiltered, this wine shows an impressive balance between fruitiness and earthy notes, accompanied by a subtle tannin structure.

Recommended Enjoyment Moments with Georgium Ovis

The Georgium Ovis is the perfect companion for hearty meat dishes, raw ham, and smoked fish. Its robust structure and the multi-layered aromas harmonize excellently with strong dishes. Serve this wine at a temperature of about 12-14°C to unfold its full range of flavors. Ideal for social evenings or as a highlight at a fine dinner.

This wine is already a rarity and should therefore be stored carefully. Keep the bottle in a cool, dark place, ideally in a wine cellar or a special wine refrigerator. The Georgium Ovis can be enjoyed immediately but also offers potential for further aging. Open the bottle a few hours before enjoying it to let the wine breathe and unfold its full spectrum of aromas.

Georgium - Where Nature and Tradition Unite in Wine

In the idyllic Carinthia, by the Längsee, lies the Georgium vineyard, run by Uta Slamanig and Marcus Gruze. Here, unique wines are created that reflect the special microclimate and the rich tradition of the region. Marcus, inspired by his time in New Zealand, has been cultivating varieties like Chardonnay and Pinot Noir since 2008 on soil shaped by the Ice Age, giving the wines a characteristic minerality.

Georgium focuses on biodynamic cultivation, allowing a diverse flora and fauna to thrive among the vines. This natural management is reflected in every glass of wine: The wines mature in large wooden barrels, without the addition of sulfur and filtration, giving them a pure, unadulterated quality. The wines of Georgium are characterized by their complexity and lightness, a homage to the Burgundian tradition, perfectly adapted to the Carinthian climate.

Marcus and Uta also run the Landrestaurant Kulinarium, where they live the principle of "from farm to table". A visit to Georgium is a holistic experience that combines a passion for high-quality wines and a connection with nature.
