Čotar Wines: Authenticity and Tradition from the Heart of the Kras |
The wines of Čotar are an expression of purest quality consciousness, characteristic uniqueness, and personality. This is reflected in the unique labels with fingerprint, symbolically representing the winemaker's signature. Čotar stands for a deep connection with tradition and at the same time for an innovative approach to viticulture.
From grape to bottling and maturation, the wines of Čotar undergo a careful process that leads deep into the cellar of the winery. The length of the maceration time varies depending on the vintage and the winemaker's decision. Fermentation takes place underground in barrels of 200 to 2000 liters, spontaneously and without the addition of selected yeasts. Until the first racking, the wine rests on the yeast, without the addition of sulfur. The wines mature in oak barrels soaked in wine of various sizes: white wines for at least two years, red wines between four and five years. Čotar consciously refrains from filtration and does not consider sediments as a flaw in the wine. The range includes white wines such as Vitovska, Malvasia Istriana, and Sauvignon Blanc, red wines such as Teran, Terra Rossa (a blend of Teran, Merlot, and Cabernet Sauvignon), Merlot, and Cabernet Sauvignon, as well as sparkling wines like Bela (White) and Črna (Red). Čotar wines stand for authenticity, quality, and a deep connection to nature and the terroir of the Kras in Slovenia. |
