The Cabernet Sauvignon is among the wine varieties recommended for cultivation in the Vipava region, requiring the most intense sunlight and highest average temperatures on the way to full phenolic ripeness of the grapes. The Angel Cabernet Sauvignon from the Batič winery originates from two vineyards – from the Vogrsko Mali Dunaj location and most commonly from the Loke Koladovca location. Loke is a village located in the warmest part of the Vipava wine region. Precise biodynamic cultivation, triple grape thinning, and the weather conditions of the 2020 vintage have led to the flavor consistency of the Angel Cabernet Sauvignon 2020. The Cabernet Sauvignon harvest, carried out by hand, took place in early October. The grapes were then sorted into 15 kg crates. After a 15-day maceration, the wine matured, 50% in new and 50% in used 225-liter oak barrels. After 25 months of aging, 50% in used and 50% in new 225-liter oak barrels, the Angel Cabernet Sauvignon 2020 was bottled at the end of December without filtration and clarification. Vintages that do not meet the house standards are not bottled. In pursuit of perfection, we have invested many working hours in the vineyards, doing our best. |

The Angel Cabernet Sauvignon is a versatile companion to a range of dishes. It pairs excellently with meat, cheese, and vegetarian dishes. Its soft structure and velvety texture make it an ideal partner for an elegant dinner with friends.
Serve this wine at a temperature of about 18 degrees Celsius to fully bring out its flavors. It is particularly recommended with mature cheese and hearty meat or mushroom dishes. Store the wine in a cooler, dark place to preserve its quality. The optimal storage temperature is between 12 and 15 degrees Celsius. Thanks to its excellent aging potential of at least 10 to 15 years, the wine develops even greater depth and complexity over time. Open the bottle about 2 - 3 hours before enjoying, or decant it to let the wine breathe and unfold its full flavor spectrum. Use mouth-blown, handcrafted red wine glasses (e.g., Zalto Burgundy). |
