The Mervič - JNK Winery, located in the picturesque landscape of Slovenia, is a place where tradition and modern winemaking meet. On 3.5 hectares of vineyards, situated at altitudes of 100 to 300 meters above sea level, the Mervič - JNK Winery cultivates a variety of grape varieties on a unique, marl-rich soil, known as Opoka. This soil imparts a special minerality and depth to the wines.

The winery mainly focuses on the production of white wine varieties such as Rebula, Chardonnay, green Sauvignon (Jakot), Pinot Blanc, some Malvasia, and Sauvignon. For red wine varieties, Cabernet Sauvignon and Merlot are the focus. In line with the winery's philosophy of quality over quantity, an integrated production system is employed. This means a lower yield per vine, leading to higher quality grapes. During the harvest, the grapes are carefully selected. The maceration of the white grapes usually lasts 3-5 days, sometimes up to 8, while the red grapes macerate for about 30-40 days.

The wines mature in oak barrels, where they remain for 1-2 years and ripen on their own yeasts. The goal of the Mervič - JNK Winery is to produce wines suitable for storage. Therefore, the sale of bottled wines only begins after 3-4 years or more, with the wines maturing in the bottles for at least one year after bottling. The philosophy of the Mervič - JNK Winery is to grow high-quality grapes, essential for the production of top wines with protected geographical origin. This is reflected in every glass of wine they produce – a tribute to the terroir, the passion, and the craftsmanship that goes into every drop.
